So...these today...a do over...
Along with Zucchini Parmesan stacks...these are from Serious Eats and pretty much are sautéed zucchini, cheeses and sauce!
Finished this one late into the night last night...but halfway through I realized that there was a first book...I hate when that happens!
Reading this...I wanted to read it because it's supposed to remind readers of The Night Circus...I just literally read the first chapters...so far...so good!
The stage is set for rain here for the next two days! Yikes!

I think we're finally getting a relief from the rain. Last week was so wet, they didn't get to cut our grass and it looks shaggy.

I have a recipe for making meatless Italian subs and it uses sauteed zucchini, diced onion,Italian spices, marinara sauce and mozzarella & parmesan cheese.
--You toast your bread in the oven with the cheeses on it (hero, sub, hoagie, french bread--whatever you call it in your region) then spoon on the zucchini & onion cooked in a skillet with olive oil and spices, and marinara sauce added at last minute. Yum!

DeleteI love almost anything made with zucchini...the one year I had a garden (in the 70s), I had lots of zucchini and tomatoes, so created many dishes with these. I've never had Zucchini Parmesan Stacks...but they look good!
