This one is for chicken tacos…she believes that this is an Everyday Food recipe from Martha Stewart.
You will need...
6 boneless chicken thighs
4 cloves of garlic, chopped
1 or 2 tablespoons of chopped adobe peppers in sauce
About a jar of a good salsa
Method…
Put everything in slow cooker and cook on high for 4 hours or low for 8…serve with any taco toppings you want…
We have been using...
Pickled jalapenos
Black olives
Fresh cilantro
Sour cream
Shredded Cheddar or Monterey Jack cheese
Avocado
More salsa
Probably you should use soft corn tortillas for this…however...we have used corn tortillas that I crisped in a saute pan on top of the stove, Trader Joe's Hand Made Soft Whole Wheat Tortillas, and even Blue Taco Shells...all have been delicious!!!
My husband also loves the sauce in the slow cooker on his tacos!!! I think the amount of chipotles determines the heat of the chicken so be wary!!!
My sister Paula just recently told me that she marinated chicken in this and rather than put it in a slow cooker...she grilled it and it was equally as yummy if not better!!!
Recipe # 2...
Pasta...this was on an Anthony Bourdain Rome Episode and it has become the favorite pasta dish in our house this year...
1 jar of the best jarred sauce available...I use Patsy's or an organic heirloom tomato one from my local Fresh Market store...of course you can use your own homemade but this pasta is a quick pasta and I love doing it this way.
1 bag or box of amazing pasta...I use an Italian imported rigatoni...you need a big sort of flat pasta like a rigatoni for this.
1 or 2 cloves of garlic..I finely grate this using a rasp.
1/4 of an onion...chopped very fine.
1/4 or less pound of pancetta...sometimes I cheat and use Trader Joe's...it is already finely diced and perfect for this.
Method...
Saute onion, garlic and pancetta in a large saute pan. While you are doing this, cook the pasta. Watch the saute so that it does not burn. Just turn off the heat until the pasta is done. Drain pasta. Add the jar of really good sauce to the saute pan. Begin to heat it slowly and add the pasta...warm everything slowly and serve when hot...
You will so totally want to serve this with really good imported Italian cheese. I add a bit of olive oil and a pat of butter to the pan...it just makes everything creamy and a bit decadent.
